Vegan Spaghetti Squash Burritos


So I found this recipe on another blog, and modified it just a little. My version is Vegan!!
My family Loves it!

Ingredients
2 cups cooked spaghetti squash
1/3 cup salsa
1 tsp cumin
1 tsp chili powder
pinch of salt and pepper
1/2 cup green onions
1 avocado
tortillas

Step 1
Warm the squash in a skillet

Step 2
Add salsa, cumin, chili powder, and green onions


Step 3
Place avocado on tortilla

It's a simple recipe, but very yummy.

Easy Whole Wheat Flour Tortillas


These are so easy to make.
It is such a fun recipe for the kids to help with.
They are delicious!!


Ingredients
1 cup whole wheat flour
1 cup white flour
1 tsp salt
1 tsp baking powder
4 Tbsp canola oil
2/3 cupwater

Step 1 
Combine flours, salt, and baking powder.

Step 2
Add water and oil, mix.


Step 3
On a floured surface, break dough into 8 equal sized balls.



Step 4
Roll out dough balls until 8 inches or bigger.

Step 5
Place tortilla into ungreased frying pan, that has been pre-heated to medium-high heat

Step 6
Cook 30 seconds on each side



Easy Crock-pot Black Beans


This is the easiest way to make up black beans.
I use black beans for so many different recipes.

Ingredients
1 16oz box or bag of black beans
10 cups of water

Step 1
Put black beans and water in crock-pot.

Step 2
Set crock-pot on high for 8 hours.

I usually put these in at night before I go to bed. That way they are done by lunch!

Vegan Crock-pot Vegetables



Ok Im really excited! I actually came up with this one on my own.
The whole family loved it. The two littlest ones ate mostly rice, but they tried the veggies too.
It is so easy to make.
 I used Trader Joes "pre-cooked" brown rice. So from the time I got home, the whole dinner was on the table in 5 minutes.
The rice takes 3 minutes in the microwave!

Ingredients

 2 Portobella mushrooms
1 zucchini
1 bell pepper
1 red onion
3 tomatoes
3 cloves of garlic
7 fresh basil leaves
balsamic vinegar
olive oil
salt
brown rice(this is not to be thrown in the crock-pot)

pepper
(feel free to add more vegetables or different vegetables)


Step 1
cut the first 4 ingredients into strips.
chop the tomatoes.
mince the garlic.
tear up the basil.


Step 2 
I layered everything in the crockpot.
Same thing you would do with a lasagna.
 In between layers I drizzled olive oil, balsamic vinegar, and threw in a pinch of pepper and salt.

Step 3
Set crock-pot on low for 6 hours

Well that's it.
Don't worry about adding too much or too little of anything.
You do not have to be precise.
I threw it over brown rice, and I really loved the sauce in the bottom of the pot, Yummy :)

Vegan Chocolate Avocado Pudding

This pudding was AMAZING!!
It has the same texture as pudding made with milk.
It's healthier and, it gets the kids to eat avocado :)

Ingredients
2 chilled avocados
1/2 cup rice, soy, or almond milk. (I used rice)
1/2 cup agave nectar
1/2 cup cocoa powder
2 tsps. vanilla

Step 1
1. Mix all ingredients together in a blender, or food processor.

Well that's it!
You can dip strawberries in it, or add whipped topping to it.
I am going to try a version with honey as the sweetener next time.

Vegetarian/optional vegan, spaghetti squash pasta dish



This Meal is really easy to make. The only time consuming part is the spaghetti squash.
I recommend making up the squash the day before. If you do this then the whole dish takes 15 minutes or less to put together.

Ingredients
1 spaghetti squash (cooked)
2 tablespoons olive oil
1 clove of garlic
1 onion
2-3 tomatoes
1 small can of olives(3 tablespoons)
2 tablespoons fresh basil
*1/2 cup feta cheese
(*optional)

Step 1

Cooking the squash:
I cook 2 spaghetti squash at once because they take so long.

1.Preheat oven to 375'
2. Fill a baking dish with about 2 inches of water
3.Poke squash with a skewer all over
4. Place squash in baking dish and place in oven for 90 minutes, or more if needed
5. When squash is done, cut in half, lengthwise
6. Scoop out seeds
7. Use a fork to separate pulp from skin.
8. Cover squash and put in fridge, or use immediately
Squash kind of looks like spaghetti, huh?

Step 2
1. Heat oil in a skillet over medium heat. Saute onion in oil until tender. Add garlic, and saute for 2 to 3 minutes. Stir in the tomatoes, and cook only until tomatoes are warm.
2. Add squash to skillet. Toss with the sauteed vegetables, *feta cheese, olives, and basil. Serve warm, (or cold)

My family loved this!
I like it even better as a leftover, chilled!
